Chef Matilde García Rojas Teja

Chef Matilde García Rojas Teja born in Toluca, State of Mexico, in 1990. She has a degree in Gastronomy from the Autonomous University of the State of Mexico, emphasizing international cuisine. She has been living in Mexico City for 5 years, researching the development, growth, and teaching of professional kitchens, leaning her interests toward Mexican gastronomy due to its variety and versatility. 

She currently works as head chef at the Anónimo Cocina restaurant in Polanco, proudly working with 100% Mexican products. She considers that the protagonist of a well-done dish are the quality ingredients that can easily allow a chef to show the dish’s maximum splendor.

She started a personal project dedicated to Cochinita Pibil. It was born from the desire to find new variations of popular Mexican street food antojitos with the Yucatan Peninsula delicacy.
